FOOD AND SCIENCE SCHEDULE AND ASSIGNMENTS
Barbara E. Goodman, Ph.D. (barb.goodman@usd.edu or 605-677-5158)
July 12-16, 2010
Wed Resources:
1. Junkyard Digestion http://docs.google.com/fileview?id=0B1v2y_lF-Kk8Nzk3YThjOTAtYWYwNy00ODlkLWE1NTgtZTBlMTgwMzU3NmQ0&hl=en
2. Veggie Trials (The Untold Story) Using Cabbage as an indicator https://docs.google.com/document/edit?id=1NTwVHTkxoDg7ua9YrnUEthokLD_Edvh1zYVRRuMLTdc&hl=en
Tuesday July 13 Homework
1. Describe the 4 “true” hormones in the GI tract and what they do.

2. Describe the neuromuscular reflexes in the GI tract (how various organs communicate with each other).

Monday July 12 Homework
1. Explain how osmotic diarrhea occurs and why. What kinds of chemicals set up the osmotic gradient (more solute in the lumen where the food is in the small intestine)?

2. How can you counteract osmotic diarrhea?

Monday Content and activities:

GI system anatomy – Junkyard Digestion http://docs.google.com/fileview?id=0B1v2y_lF-Kk8MTJiMTJmMzQtNDRmNC00NThjLWExMzItZjQ4NDM0OTQ0ZTU1&hl=en
PPT

GI system physiology – Digestion and absorption of nutrients http://docs.google.com/leaf?id=0B1v2y_lF-Kk8NmViODU2YjUtMmM2OS00YjIyLWFjMGEtOTYwZTdjMmFmMzhj&hl=en

Assignments:

1. Choose your favorite nutrient (carbohydrate, protein, or fat) and trace its digestion and absorption throughout the gastrointestinal tract. What happens to it and in which organ(s) does it happen? How does the broken down nutrient get absorbed across the cells into the blood stream? Where does that happen? Write a one-page summary for class tomorrow.

2. With a partner choose a disease with gastrointestinal symptoms and investigate the physiology, pathophysiology, and treatment of the disease. Be prepared to present your disease to the class during Wednesday morning’s session. A reliable source is the National Institutes of Health National Institute of Diabetes and Digestive and Kidney Diseases (www.niddk.nih.gov). You may use any presentation style/modality that you choose (poster, Powerpoint, lecture, role play, skit, brochure, etc.)

Tuesday July 13 morning

Content and activities:

GI system physiology – Chemical and physical processes of digestion

Assignment:

1. Find one other hands-on activity that you could use with your students that would help with their understanding of Food and Science. E-mail link to activity to barb.goodman@usd.edu as an annotated url (explaining what it is and what you would use it for). A good source of ideas is http://www.frontiersinphys.org/pages/page04a.asp which are resources designed by K-12 teachers for the American Physiological Society. A more advanced source is http://www.apsarchive.org/ which is the archive of teaching resources of the American Physiological Society.

Tuesday July 13 afternoon

Content and activities:

GI system physiology – “Virtual Rat”: A tool for understanding hormonal regulation of gastrointestinal function

Wednesday July 14 morning

Content and activities:

GI system pathophysiology – Presentations about gastrointestinal diseases and conditions
